Skirt Steak & Broccolini Dinner
I want to introduce you to my Skirt Steak & Broccolini recipe. Sometimes it’s nice to have an easy dinner that looks like I cooked all day. However, easy dinners are usually fast-food and perhaps, not so health-minded. It’s hard to win in a corporate or full-time working world when it comes to health. However, there are some recipes I love to make that satisfy my lack of time and need for healthy wholesome foods. The biggest stress I have with my Skirt Steak & Broccolini recipe is how long it will take for my oven to heat up. Haha!
The first time I made this recipe, Rob was stressed over a grant (nothing new) and I had had a crazy day at work (also nothing new). I wanted something special. I wanted to sit down to a dinner that would help draw me out of my tired and overworked mindset to a moment of just living, enjoying and focusing on something other than the stresses of life. Enter my Skirt Steak & Broccoli!
How to have a delicious dinner in 30 minutes:
I have adjusted this recipe to suit my personal taste preference but you may prefer to add more oil or garlic. To each his own, right?
Skirt Steak & Broccolini Dinner
Ingredients
- 1/2 lb Skirt steak
- 1 bunch Broccolini
- 1 tbsp Olive oil
- 2 tbsp Walnuts, chopped
Marinade (divided)
- 3 tbsp Balsamic vinegar
- 1 tbsp Olive oil
- 3/4 tbsp Dijon mustard
- 2 cloves Garlic, minced
- 1/4 tsp Himalayan salt
- 1/2 tsp Pepper
Instructions
- Preheat oven to 425F.
Marinade
- Whisk together balsamic vinegar, 1 tbsp oil, mustard, garlic, salt and pepper. Reserve 2 tbsp.
- Add marinade to skirt steak in freezer bag or bowl. Allow to marinade while you prep the broccolini.
Broccolini
- Meanwhile, trim ends of broccolini and drizzle with 1 tbsp olive oil.
- Place broccolini on foil lined baking sheet. Sprinkle with walnuts, salt and pepper (if desired). Bake 15 minutes.
Skirt Steak
- While broccolini cooks in oven, remove steak from marinade and cook steak in large skillet over medium-high heat 3 minutes per side or until browned. I prefer my steak to be well done so I prefer 7 minutes per side. Flip once during cooking.
Plating
- Remove broccolini from oven and divide between serving plates.
- Top with skirt steak, thinly sliced across the grain.
- Drizzle with skirt steak juices and reserved marinade.
- Sprinkle with the walnuts cooked alongside the broccolini.
