Collard Turkey Club Wrap

This wrap recipe is one of my favorite lunches to make. It’s absolutely delicious, even though it takes a little time. You can make the coleslaw in advance or substitute a prepared coleslaw. You can also use ham or previously cooked bacon, leftover from your weekend breakfast. Just make sure your coleslaw is homemade! Store bought coleslaw is often FULL of extra sugars. If you need a little sweetness to compliment the vinegar tag, feel free to add some stevia.

Collard Turkey Club Wrap

Ingredients

  • 2 collard green leaves
  • 4 slices turkey breast, deli
  • 4 slices bacon, cooked
  • 2 slices Swiss cheese

Coleslaw

  • 1/2 cup cabbage, shredded
  • 1 tbsp mayonnaise
  • 1/4 tsp garlic powder
  • 1/2 tsp Dijon mustard
  • 1/4 tsp celery salt
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp pepper

Instructions

  1. Combine coleslaw ingredients in medium bowl. Mix well. Set aside.
  2. Remove center stem from collard greens; you'll end up with a leaf that is likely heart-shaped.
  3. On each leaf, lay 2 slices of turkey, 2 slices of bacon, and 1 slice of cheese. Spoon 1/4 cup coleslaw mixture across.
  4. Roll sandwich, tucking edges in like a burrito. Secure with 2 toothpicks. Cut in half to serve.
