No-Bake Peanut Butter Bites

It’s Friday. Yay! Not only have I completed my first week on my new work schedule but I’ve invented some delicious low-carb Peanut Butter Bites!

It was hard to get my mind around NOT waking up at 3am to study this week. Now, I go to work like a regular person and come home a wee bit earlier to do my homework and actually live again. I am grateful my workplace was so understanding that my prior routine wasn’t sustainable. In 2018, I had a goal to put Rob and I first. This new work schedule was the first step in that direction. School, work and other life obligations are second to our lives and health. I’m learning.

In honor of my first week of sanity, I came home from work today and decided to make a nice dinner for Rob and I. Yes, he has had to put up with a few crazy meals (ok, more than a few) this last while. We are having a pot roast (something we haven’t enjoyed for a long time). We don’t usually keep sweets in the house but I decided that it was probably time for a little bit of yum.

I like to experiment. If you give me a recipe, I cannot follow it. It is very hard for me to follow a recipe 100%. Regardless, this experimentation in the kitchen has allowed me to get to know my ingredients and how they react. I love to invent things and share them with the world.

Today, I concocted this little treat that I have named “No-Bake Peanut Butter Bites.” Actually, I wasn’t sure what to call them. I think they will be perfect with a nice cup of coffee or before a workout when I need a little pick-me-up. They are lower in carb than most treats but packed full of energy from the nut fats. I hope you love them too.

Yield: 18 bites

No-Bake Peanut Butter Bites

Total Time 10 minutes

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup non-fat milk powder
  • 1/4 cup unsweetened coconut, shredded
  • 1/4 cup almond flour
  • 1/4 cup flaxseed meal
  • 1/4 cup sugar free maple syrup
  • 1 tsp cinnamon

Instructions

  1. Thoroughly combine all ingredients in a bowl.
  2. Shape the mixture into 1 inch balls. Chill thoroughly before serving; store remaining bites in the refrigerator.

Notes

Be creative. You may like to press a peanut into each bite (as shown) for extra bling. Another delicious presentation is to melt some chocolate. Drop a dollop of thick chocolate on parchment paper. Press a bites into each dollop OR dip the bite into some melted chocolate. Chill.
