Total Time 4 hours 10 minutes

Ingredients

  • 2 lbs ground turkey
  • 1 tbsp olive oil
  • 1 cup cream cheese, optional
  • 1 cup cheddar cheese shredded, optional
  • 3.5 cup chicken broth
  • 0.5 cup tomato puree
  • 1 medium tomato, chopped
  • 0.5 onion, chopped
  • 1 clove garlic, minced
  • 1 tbsp taco seasoning, or more
  • 1 tsp black pepper
  • 2 tbsp coriander finely chopped, optional, for garnish

Instructions

  1. Brown ground turkey with olive oil, garlic and onion.
  2. Transfer the meat mixture into a slow cooker. Add tomato puree, chopped tomato, chicken broth, taco seasoning and pepper.
  3. Cook on low for 4 hours or high for 2 hours.
  4. For a thicker soup: stir in cream cheese and cheddar cheese to the soup 30 minutes before serving. Serve with a bit of coriander on top for extra flavor.

Notes

I love to add extra spice! Usually, I'll add around 3tbsp of taco seasoning. For a mild soup, add 1 tbsp. You may also choose to make your own seasoning by adding 1 tsp of cumin , 1 tsp of pepper and 1 tsp paprika (for a mild soup).
