One-dish Summer Skillet

One-dish skillet meals are always so comforting. I make them when I’m really hungry and I want something fast. In less than 30-minutes, a tasty meal awaits!

Rob and I enjoyed this recipe last night after a busy Saturday. As an adult, I’m finding Saturdays are more about getting caught up than relaxing. Relaxing? What is this thing called relaxing anyway?

Yesterday, Rob and I were busy around the house, catching up on work and life, and drinking coffee. Nothing beats weekend coffee! We still have a long list of things to do though! But, we are making some progress. This is life.

Hangry

For various reasons, Rob and I got our Saturday run started a little later in the day than normal.  We took a quick run around the Charles River. By the time we got home, we were both hangry!

In 2018, this playful hangry word was added to the Oxford English Dictionary and defined as, “Bad-tempered or irritable as a result of hunger.” Actually, I thought that was just my personality. I’m relieved to know I have an excuse – lol!

Fresh summer flavors

Enough about me: this one-dish skillet meal was awesome.

The fresh basil, tomatoes and spinach added a nice summery taste to this simple concoction. I liked how it came together so quickly too!

Since both Rob and I live with type 1 diabetes, it was also nice to enjoy a low-carb and satisfying dinner option. Carbs aren’t bad! However, eating a lower-carb/lower-glycemic index meal is certainly easier for us to manage.

I made this recipe exactly as written and we ended up totally stuffed and happy. Buh bye hangry.

One-dish Summer Skillet

Ingredients

  • 1.5 lb ground turkey
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 eggplant, small, diced
  • 1 Tbsp Italian seasoning
  • 1/2 tsp Himalayan salt
  • 4 roma tomatoes, seeded, chopped
  • 2 cups baby spinach
  • 1/4 cup basil leaves, fresh
  • 1/2 cup Mozzarella Cheese Pearls, fresh
  • 1/2 cup Parmesan cheese

Instructions

  1. Heat a large nonstick skillet over medium-high heat.
  2. Add ground turkey, garlic and onion to skillet; cook 5 minutes, until beef brown and starting to crumble.
  3. Add eggplant, Italian seasoning and salt. Cook 5 minutes. Stir in tomatoes and spinach.
  4. Cook 5 more minutes or until vegetables are tender. Sprinkle with fresh basil and cheese. Cool 2-3 minutes, until cheeses are melted.

Notes

This recipe pairs well with warm Focaccia.
