Easy Comfort Chili
This weekend Rob and I decided to focus on finding comfort in getting organized amidst this thing called life. For example, I spent my entire morning cleaning my fridge, freezer, and spice cabinet. I suddenly feel like a super woman with ultimate kitchen organization in my power! Around noon today, my Instacart grocery order arrived. It was fun to actually put away my groceries in a totally organized way – yes, I am a kitchen nerd and I love it.
Back to the comfort food chili motivation:
Rob is working on a research paper (the most epic way to spend a weekend, right?) and I am trying to learn something new (another story for another day but it involves QR Codes and SharePoint) so — I decided to make something super home style. I’ve made the chili recipe below a couple times and it’s been so good each time I decided it was finally worthy of a fitT1Dfoodie blog post!
Speaking of the weekend, I captured this pic after yesterday’s miserable rainstorm. Rob and I went for a quick walk to get some fresh air – it felt good to leave the confines of our condo. #WFH is fantastic but fresh air is epic. Today, there wasn’t a spec of rain and the sunshine was in full power so it made up for these nasty skies! Yay.
Here’s my easy comfort chili recipe. I hope you enjoy it as much as Rob and I did. We have leftovers for the week ahead so that makes it even better. Now you know what I’ll be eating for lunch this week. Enjoy!
Easy Comfort Chili
Ingredients
- 1 pound turkey, ground
- 3 cloves garlic , minced
- 1/2 cup yellow onion , diced
- 1 (15 ounce) marinara
- 1 (14.5 ounce) can diced tomato
- 2 (4.5 ounce) cans diced green chilies
- 1 (15 ounce) can kidney beans, drained, rinsed
- 1 (15 ounce) can black beans, drained, rinsed
- 2 tbsp chili powder
- 1 tbsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tsp garlic powder
- Optional toppings: sour cream, shredded cheddar cheese, sliced green onion
Instructions
- Prepare slow cooker: set to low temperature.
- Add the ground turkey, and onion to a medium size skillet. Cook until the onion is soft and the turkey is completely cooked over medium heat.
- Add the garlic and cook for an additional 2 minutes.
- Remove the ground turkey mixture from the heat and add to warmed slow cooker.
- Add remaining ingredients to slow cooker. Stir to combine.
- Cook on low heat for 4-6 hours.
- To serve: top with your favorite toppings (sour cream, green onions, cheddar cheese), and enjoy!
Notes
Stove top method:
- After the meat, onions and garlic have cooked (see instructions above)add in remaining ingredients. Allow to simmer for 30 minutes.
- To serve: top with your favorite toppings (sour cream, green onions, cheddar cheese), and enjoy!
NOTE: This recipe may be frozen for 3-4 months. From frozen, thaw chili in the refridgerator and then heat over medium heat for 20 minutes until warmed through. Enjoy!
