Bacon Chicken with Honey Dijon Sauce

Sometimes, there is nothing better than home-cooking and recipes like my bacon chicken with honey dijon sauce on cold wintery nights. It’s December and the windy Boston evenings are turning into crisp Boston mornings. In addition, the bustle of busy, end-of-year work days, makes quick delicious dinners all the more important. It’s cold and the days are dark and long so it’s easy to opt for a pre-made dinner delights, consequently costing more than the time I might save. So, that’s why I thought I’d share this delicious new recipe with you.

rob workingTuesday night, I got home from work and I was starving! Shamefully, I didn’t have anything prepared and Rob had been working on his upcoming grant submission so I knew he’d appreciate some sort of comfort food. Ah the comforts of home! Hence, on nights light this, Rob and I will smirk to each other and say, “Where are our moms?” when we need the good old ease of time-gone-by.

As a result, a new recipe to the rescue!

I got inspired to concoct this Bacon Chicken with Honey Dijon Sauce recipe. We enjoyed it with some marinated tomatoes and a leafy green salad however, if I was to make this recipe again (I will), I’ll probably make it with a side of green beans. Green beens would be a very nice compliment to the colors and taste of this recipe.

Finally, though the wind was blowing, our bellies were full! We admiringly concluded that this recipe is a little bit sweet, a little bit savory, and the perfect weeknight recipe. In addition, Rob gave me the thumbs up with a big grin as he took his last bite, swallowed and lovingly said, “Husband approved.” As a result, I knew I had to share it with you!

Bacon Chicken with Honey Dijon Sauce

Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 3 chicken breast, boneless, skinless
  • salt
  • pepper
  • 6 slices bacon
  • 2 tbsp mustard, whole-grain
  • 1/3 tbsp water
  • 1 tsp apple cider vinegar
  • 1 tsp red pepper flakes, crushed

Instructions

  1. Preheat oven to 400F.
  2. Cut each large chicken breast in half.  Season with salt and pepper, as desired.
  3. Wrap each half with a slice of bacon. I love Applegate's Natural Turkey Bacon. Place on a baking tray or pan.
  4. Combine mustard, honey, water, red pepper and vinegar in a small bowl. 
  5. Drizzle mixture over chicken, reserving 3 tbsp for dipping.
  6. Bake chicken 20-25 minutes, until bacon is crisp and chicken is cooked through. Serve with reserved dipping sauce.

Notes

Alternatively, you may choose to use 1/4 tsp cayenne pepper or 1/2 tsp chili powder instead of crushed red pepper flakes.
