Greek Salad

It’s 2021 and pandemic life is still here. It’s ok. the cool thing about being human is our ability to adapt. For Mother’s Day 2021, Rob and I wanted to treat our moms to travel… from the comfort of our respective kitchens.

We arranged a cooking class with a lovely lady named Julia through Airbnb, or on Instagram at @juliapant. Julia walked us through an epic meal consisting of Moussaka and Greek Salad from her home in Greece. The time difference meant that Julia and her husband were up late cooking for us, but their hospitality and knowledge of Greek cuisine was evident, and undaunted by the late hour for them.

The recipe below has been adapted for my own preferences, after making it a few times. However, FULL CREDIT goes to Julia!! This recipe is a definite keeper and if you are looking for a way to travel, and get a taste of Greek cuisine, I highly recommend checking out Julia’s Airbnb offerings.

Greek Salad

A large salad that is absolute perfection on it's own or with a nice protein side.

Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 3 tomatoes
  • 1 green pepper
  • 1 large English cucumber
  • 1 red onion
  • 1/4 cup Kalamata olives
  • 150gr feta cheese
  • 4 tbsp olive oil
  • 1 tsp oregano, dry
  • salt, to taste

Instructions

  1. Add chopped tomatoes, cucumber, green pepper and onion to bowl. Gently mix.
  2. Top with olives.
  3. Lay slice (or slices) of feta over-top.
  4. Sprinkle with oregano and drizzle with olive oil. Add a dash of salt (to taste), then serve.

Notes

This salad is lovely in one large bowl (then, it is recommended that the feta is crumbled), or divided as individual salads. If serving individually, a slab of traditional feta placed neatly on top of the salad is best for presentation.
