Almond Bread – Low Carb

Rob and I discovered a sincere love for Almond Bread – almost every morning, we enjoy this delicious and easy to prepare bread with a cup of coffee, some eggs and whatever else is on our table that day. This recipe is a staple in our house – tried, tested and true.

Why I love this almond bread

There are three things that make this recipe my most favorite “bread” recipe in the world:

  1. Taste – the almond flour and flax meal offers a rich flavor
  2. Flexibility – it’s a perfect base recipe; add blueberries for blueberry bread, strawberries for strawberry bread and more!
  3. Low carb count & low glycemic index – this recipe is so easy on the blood sugars! It’s 110% deliciously diabetic friendly.

Did I mention this bread is a great source of fiber too?

Almond Bread - Low Carb

This recipe makes 1 loaf of bread (8 servings).

Total Time 40 minutes

Ingredients

  • 1.5 cups almond flour
  • 1/3 cup flaxseed meal
  • 4 eggs
  • 1/4 cup almond milk, unsweetened
  • 1 tbsp olive oil
  • 2 tsp baking powder
  • 1/2 tsp himalayan salt

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Place parchment in bottom of loaf pan or grease lightly.
  2. Mix almond flour, flaxseed, eggs, almond milk, olive oil, baking powder, and salt together in a bowl until smooth dough forms.
  3. Add dough to prepared loaf pan.
  4. Bake in preheated oven until top is golden brown, approximately 40 minutes.

Notes

Be creative - for something different add 1/2 cup berries (blueberries, strawberries, raspberries...) to dough. The possibilities are endless. Enjoy.
