Almond Bread – Low Carb
Rob and I discovered a sincere love for Almond Bread – almost every morning, we enjoy this delicious and easy to prepare bread with a cup of coffee, some eggs and whatever else is on our table that day. This recipe is a staple in our house – tried, tested and true.
Why I love this almond bread
There are three things that make this recipe my most favorite “bread” recipe in the world:

- Flexibility – it’s a perfect base recipe; add blueberries for blueberry bread, strawberries for strawberry bread and more!
- Low carb count & low glycemic index – this recipe is so easy on the blood sugars! It’s 110% deliciously diabetic friendly.
Did I mention this bread is a great source of fiber too?
Almond Bread - Low Carb
This recipe makes 1 loaf of bread (8 servings).
Ingredients
- 1.5 cups almond flour
- 1/3 cup flaxseed meal
- 4 eggs
- 1/4 cup almond milk, unsweetened
- 1 tbsp olive oil
- 2 tsp baking powder
- 1/2 tsp himalayan salt
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Place parchment in bottom of loaf pan or grease lightly.
- Mix almond flour, flaxseed, eggs, almond milk, olive oil, baking powder, and salt together in a bowl until smooth dough forms.
- Add dough to prepared loaf pan.
- Bake in preheated oven until top is golden brown, approximately 40 minutes.
Notes
Be creative - for something different add 1/2 cup berries (blueberries, strawberries, raspberries...) to dough. The possibilities are endless. Enjoy.
