Pumpkin Spice Pancakes

It’s September now. I have no idea what to say about this except “pumpkin spice pancakes.” Yum!

Though September marks an ending, I remind myself that every ending is a new beginning. And, with September generally comes pumpkin spice: a strange therapy to the end of summer which results in an insane number of pumpkin-lusting humans. It’s bizarre!

Personally, I’d rather eat chocolate but, I will never say “no” to pumpkin spice pancakes!

Let there be Pumpkin Spice!

A couple days ago, I opened our bedroom window and felt a familiar twang of crispness in the air. The sidewalk in front of our condo will soon be adorned with golden leaves and I’ll need my fuzzy socks.

According to USA Today, pumpkin spice season officially began on August 21st this year (what?) which explains why I occasionally get fall flavors whiff from the nearby Dunkin’s Donuts… Maybe this is what made me decide to make my Pumpkin Spice Pancakes and officially welcome September back into my life!

So, here’s my recipe!

My pumpkin spice pancake recipe makes 12 medium pancakes that freeze well. Since it’s just Rob, me and Peanut-the-hamster, this recipe keeps us satisfied for several breakfasts.

By the way, these pancakes are both husband and hamster approved! Though Rob and I don’t like to give Peanut human treats (hamsters are supposed to eat hamster food right?), we made the executive decision to introduce Peanut to pumpkin spice with his own cute mini pancake. This quick video snippet of Peanut enjoying his first pumpkin spice pancake pretty much says it all!

Pumpkin Spice Pancakes

Pumpkin Spice Pancakes
Prep Time 15 minutes
Cook Time 7 minutes
Total Time 22 minutes

Ingredients

  • 1 1/2 cups almond milk
  • 1 cup pumpkin puree
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups whole wheat
  • 3 tablespoons stevia
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.5 teaspoon pumpkin spice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Flax Egg

  • 1 tbsp flaxseed meal, ground
  • 2.5 tbsp water

Instructions

  1. Combine the flax egg ingredients (flaxseed meal, water) in a small bowl and set aside for 5 minutes.
  2. In a large bowl, mix together the milk, pumpkin, oil and vinegar. pumpkin spice mixture
  3. Add the flax egg to the pumpkin mixture.
  4. In a separate bowl, combine the flour, stevia, baking powder, baking soda, and spices. Then, stir into the pumpkin mixture just enough to combine. pumpkin spice flour
  5. Heat a lightly oiled griddle or frying pan over medium-high. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides. Serve warm.
