Bob’s Red Mill Low Carb Pancake Recipe

Last fall, I was thrilled when I found Bob’s Red Mill vegan Low Carb Baking Mix. It has only 8 grams of net carb per serving. What? According to Bob’s Red Mill, this baking mix can be used cup-for-cup in place of all-purpose baking flour in most recipes. I will second that! I’ve used this baking mix for pretty much everything and it never fails me.

On the product bag there is an awesome recipe for Low Carb Pancakes (see image). I’ve modified this recipe a little bit based on what I usually have here at home and also because Rob has a severe egg allergy. However, I made real Bob’s Red Mill low carb pancake recipe for my parents at Christmas and it was a total hit. Now, my mom and dad are both fans of this product too.

For years, I thought that I didn’t like pancakes. However, I was wrong. I didn’t like what my blood sugar did after eating pancakes. This recipe is a great way to get all the yummy pancake joys without the high blood sugars.

Instructions

  1. Combine the baking mix, baking powder, egg replacer and cinnamon together in a medium sized bowl.
  2. Add the almond milk and oil. Stir well to combine. Set aside.
  3. Heat and oil griddle. Drop batter onto griddle to form 4 pancakes. Cook until bubbles rise to top side.
  4. Flip and continue to cook for approximately 1 more minute. 
  5. Serve warm with low carb syrup, peanut butter and/or fruit.

Notes

If you do not have an egg allergy and you prefer to use eggs in this recipe, replace the egg replacer with 2 eggs. Reduce the almond milk to 0.75 cups.
