Italian Sausage Soup

Last week I decided to make Italian Sausage Soup. It’s weird, I’ve never been a soup lover. I have always felt that soup was just a way to water down perfectly good ingredients. I know I know… grandmothers everywhere are screaming at me right now.

Growing up, my mom made a lot of soup. She liked to add big hearty pieces of beef and vegetables so, my soup bowl would usually end up full of those big hearty pieces and little broth. After all, I considered the broth to be filler and I was a growing farm girl with an appetite. What did I know?

Soup Love Evolution

That was then. I’ve been married now for 7+ years. I have a home of my own. I have bills, grocery lists and domestic duties. And, I’ve discovered a love of soup.

Last week, I had some unused sausage in my freezer and a few random vegetables. Rob and I had been having several typical Rob & Laura meals (for us, this is a salad, some protein and some form of starch) and we needed something a little different. Actually, I was desperately wishing to go “out” for dinner. Cooking is a true passion of mine but sometimes, someone else’s cooking is domestic bliss.

Rob arrived home from work, tired after another long day of earth shattering research and he smiled when he saw my pot of soup simmering away on the stove. Through the years, Rob has recounted his beloved memories of homemade soup. He has also warned me that his mother’s broccoli soup is the best so I’ve taken note to never ever try to make broccoli soup. However, Rob has never mentioned anything about Italian Sausage Soup so it was game time! Could I craft a hearty soup we would both enjoy?

By the way, confused about all the different kinds of beans? I chose to use Great Northern Beans for this soup recipe because they hold up much better in soup style dishes than some other bean varieties. Usually, I just use what I have on hand. A Savory Soup is Born

Let’s just say, it’s hard for me to be enthusiastic about soup, but this one is good. I had two servings! The next day I was out of town and Rob ate the rest of it. Wow! This soup was hearty enough for a girl like me and so delicious my dear husband might one day recount beloved memories of his wife’s Italian Sausage Soup too. I hope you enjoy this simple but delicious Italian Sausage Soup as much as Rob and I did.

Italian Sausage Soup

Italian Sausage Soup

Ingredients

  • 1 lb italian sausage
  • 1 garlic clove, minced
  • 28 oz beef broth
  • 14.5 oz stewed tomatoes, italian style
  • 1 cup carrots, sliced
  • 14.5 oz great northern beans, drained
  • 2 zucchini, cubed
  • 2 cups spinach, firmly packed
  • 1/4 tsp pepper
  • 1/4 tsp himalayan salt

Instructions

  1. Brown sausage with garlic in a stockpot. Stir in broth, tomatoes and carrots. Season mixture with salt and pepper. Reduce heat, cover, and simmer for 15 minutes.
  2. Add beans and zucchini. Cover, and simmer another 15 minutes, or until zucchini is tender.
  3. Remove from heat, and add spinach. Replace lid to allow the spinach to wilt and deepen in color. After 5 minutes, stir and serve.
