Homemade Granola

In a recent podcast interview (023 T1D Realities with Crystal Bowersox), I asked “Is there anything else you’d like to share?” and Crystal, without hesitation, commented, “Yes. Make your own granola!” Ha!

She was right. This homemade granola recipe was inspired by that conversation. Afterall, 99.9% of the time, store bought granola is VERY high in sugar. Homemade granola is easy to make, delicious, and by making it at home, there is a bit more control over the sugar content. In this recipe, the sugars can be further reduced by omitting the dried fruit. It’s perfect sprinkled over a little greek yogurt by the way!

I cannot take full credit for this recipe… had Crystal not shared her homemade granola passion with me, I probably wouldn’t have researched how to assemble it. This recipe is the product of that conversation. Thanks, Crystal!

Homemade Granola

Homemade Granola

Ingredients

  • 2 cups rolled oats
  • ½ cup nuts, raw, chopped
  • ¼ cup seeds, raw, like sunflower or pumpkin
  • ½ cup dried fruit, unsweetened
  • 2-3 tbsp maple syrup
  • 2 tbsp coconut oil, virgin
  • ½ tsp almond extract, or vanilla extract
  • ½ tsp Himalayan salt

Instructions

  1. Preheat the oven to 300º F. Line a baking sheet with parchment paper.
  2. Combine all ingredients in a mixing bowl. Allow coconut oil to melt by using your hands to mix well.
  3. Spread mixture onto parchment lined baking sheet. Bake for 10 minutes, until very lightly toasted. Allow to cool.

Notes

Store in airtight container in a cool, dry place.
