Since this is my VERY first episode I thought I’d provide a brief introduction and share a little about what to expect from me each week.

I assume you’re tuning in because you either know me or you know someone with Type 1 Diabetes. Each week (see update below), you’ll get a raw and uncut glimpse into my daily life with Type 1 Diabetes. This will include personal thoughts, struggles, frustrations and triumphs. This Week’s Deliciously Diabetic Recipe:

Green Bean Chips

Green Bean Chips
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 1 lb green beans
  • olive oil
  • himalayan salt
  • pepper

Instructions

  1. Preheat oven to 450F.
  2. Trim the ends off the green beans. 
  3. Toss beans with a little bit of olive oil and spread them in a single layer on a rimmed baking sheet. Lightly dust them with salt and pepper.
  4. Bake for 20 minutes, stirring occasionally, until golden brown.
07/03/2020 UPDATE:

Life happened! I got wrapped up in my career, a job switch, and I went back to school for a degree in Communications! At this time my beloved podcast is “pressing pause.” I am trying to learn to balance all of these very important things (plus staying fit and enjoying time with my husband).

In the meantime, I will continue to post recipes and my personal commentary, when I can.
