003 Independence Day with T1D

How was your Independence Day? Rob and I had a great time with friends. We went to a barbecue and enjoyed so much good food. I’m sharing 3 things I did to help me manage my blood sugars.

This Week’s Deliciously Diabetic Recipe

Chia Pudding

Chia Pudding
Prep Time 30 minutes
Total Time 30 minutes

Ingredients

  • 1/2 cup chia seeds
  • 1 cup almond milk, unsweetened
  • 1 cup strawberries
  • 1 tbsp maple syrup, unsweetened

Instructions

  1. Add chia seeds, liquid (I generally use unsweetened almond milk), fruit (such as frozen strawberries, mangos or blueberries), a 1 tbsp of sweetener (such as honey, maple syrup or 1 tsp stevia) together in a blender. Blend. 
  2. Allow set in the fridge for at least 20 mins. 

Notes

You can be very creative with this recipe. There are so many options. Just use what you have on hand!
