Creamy Caesar Dressing
Monday night was one of those nights when the easy balsamic vinegar and olive oil combo just wouldn’t cut it. I wanted a delicious creamy caesar dressing for my salad… just because. It was late and Rob and I were in need of a quick meal. I decided to bake some fish and pair it with a homemade caesar salad… but, we didn’t have any dressing!
A Monday Night Worthy Salad Dressing
I spent a couple minutes searching for a simple creamy salad dressing recipe online and finally, the following concoction came to be. It’s a combination of all the inspirations I found online plus my fridge contents, folded into one creamy and delicious Monday night worthy dressing.
This is not the most healthy salad dressing, but it’s the most delicious homemade salad dressing I’ve made, in like… ever. I hope you love it as much as Rob and I did. In all honesty, the two of us polished off this entire recipe in one sitting. Here, here… we’re human and Mondays suck sometimes. ‘Nuff said.
Creamy Caesar Dressing
Ingredients
- 1/4 cup mayonnaise
- 2 tbsp lemon juice
- 1 tbsp olive oil, extra virgin
- 2 cloves garlic, minced
- 1/3 cup parmesan cheese, grated
- 1 tsp black pepper
Instructions
- Whisk together all ingredients. Serve over romaine lettuce.
Notes
This dressing may be refrigerated for 1 week.
I wanted to make sure that I don’t loose this recipe. I know I’ll make it again. Rob actually asked me if I got it from Whole Foods! Whoa. Jackpot. This dressing cost me pennies to make. Score!
