007 Back to School with T1D

It’s suddenly back-to-school season for many Americans right now. Moms and Dads are busy getting their kids ready to return, College Freshmen are leaving home for the first time and working adults are trying to figure out how to balance their jobs, family and education –  me included. I’m returning to school in a couple weeks too… so the topic of Back-to-School combined with Type 1 Diabetes on my mind. In this episode, I’m sharing a few things my parents did to make back to school a little more diabetes friendly for me as a child.

Deliciously Diabetic Back to School Snack Ideas

Since we’re on the topic of Back to School, here are a few ideas for after school snacks:

  • Take the stem off a strawberry and cut it in half. Then, spread a little peanut butter across the slice and place the other half back on. These are best slightly chilled and are always fun to eat.
  • Make mini cucumber sandwiches. Instead of bread, use a cucumber slice and top with a slice of cheese, tomato, deli meat and maybe a little spreadable cheese like laughing cow or herbed cream cheese.
  • Apple slices topped with peanut butter
  • Grapes, dipped in plain yogurt and frozen
  • Carrot or celery sticks with a little ranch dressing, peanut butter or soft cheese
  • Celery sticks with hummus and olives
  • Nuts
  • Hard boiled egg sprinkled with pepper and paprika
  • Yogurt
  • Cottage Cheese

There are endless possibilities! Just because your kids are hungry doesn’t mean they need to resort to cookies if they can’t wait for dinner.
