This Week’s Deliciously Diabetic Recipe
I recently shared a picture of my Breakfast Sandwich on social media. Not only was it nice to look at but it was delicious and simple to make. Since posting that pic, I’ve made these breakfast sandwiches 3x! My Breakfast Sandwiches are fairly easy on the blood sugar, a little bit fancy and a whole lotta simple!
Easy Breakfast Sandwich

Ingredients
- 1 pita, or Sandwich Thin
- 1 tsp mayonnaise
- 1/8 tomato, sliced
- 1/8 avocado
- 1 egg, fried
- 1 slice bacon
- 1/4 cup arugula
Instructions
- Toast 1 pita or Sandwich Thin.
- Spread mayonnaise on half of the pita. Top with a tomato slice, some avocado a fried egg and bacon.
- Top with arugula & other half of pita.
