Slow Cooker Taco Soup
This is a simple lunch or dinner taco soup that warms the soul. It can have many variations based on your taste preference.

Ingredients
- 2 lbs ground turkey
- 1 tbsp olive oil
- 1 cup cream cheese, optional
- 1 cup cheddar cheese shredded, optional
- 3.5 cup chicken broth
- 0.5 cup tomato puree
- 1 medium tomato, chopped
- 0.5 onion, chopped
- 1 clove garlic, minced
- 1 tbsp taco seasoning, or more
- 1 tsp black pepper
- 2 tbsp coriander finely chopped, optional, for garnish
Instructions
- Brown ground turkey with olive oil, garlic and onion.
- Transfer the meat mixture into a slow cooker. Add tomato puree, chopped tomato, chicken broth, taco seasoning and pepper.
- Cook on low for 4 hours or high for 2 hours.
- For a thicker soup: stir in cream cheese and cheddar cheese to the soup 30 minutes before serving. Serve with a bit of coriander on top for extra flavor.
Notes
I love to add extra spice! Usually, I'll add around 3tbsp of taco seasoning. For a mild soup, add 1 tbsp. You may also choose to make your own seasoning by adding 1 tsp of cumin , 1 tsp of pepper and 1 tsp paprika (for a mild soup).
