Savory Summer Strawberry Salad
Tonight, I was excited because I had an abundance of fresh new groceries in my kitchen. Don’t you just love that feeling? However, the practical domestic Laura made me consider the “what could go bad first” conundrum. Well, I had some spinach, kale and a rotisserie chicken so… this recipe for Savory Summer Strawberry Salad was born.
It’s only Tuesday. I actually had to stop and think about that sentence. It feels more like Thursday. I wanted a simple recipe, minimal effort but an abundance of flavor and comfort. And no, I’m not a high maintenance chick either.
What I came up with
So, here’s what I came up with for dinner. It’s a simple summer salad that is perfect for a quiet night at home. It’s also husband approved!
Savory Summer Strawberry Salad
Ingredients
- 1/4 cup pecans, chopped
- 1.5 cups chicken, rotisserie
- 1/4 cup mayonnaise
- 1/2 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp tarragon, dried
- 6 oz spinach, chopped
- 2 cups strawberries, sliced
Dressing
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tbsp honey
- 1/2 tbsp Dijon mustard
Instructions
- Toast pecans in skillet over medium heat until fragrant and golden. Set aside.
- Combine chicken, mayonnaise, mustard, lemon juice, tarragon, salt and pepper to taste in medium bowl.
- Divide spinach between two plates. Top with sliced strawberries.
- Whisk together dressing ingredients. Drizzle dressing over greens; top with chicken salad and pecans.
Notes
Freeze unused chicken. You may substitute basil for tarragon.
