Leftover Turkey Casserole
If you’re like me, you have leftover turkey lurking in your fridge. I spent Christmas 2018 here in Boston while Rob flew home to Winnipeg MB to be with his family. Mine arrived on December 21st. Don’t worry – that’s our tradition. We spend the entire year together so we made the decision a long time ago to spend the holidays with our respective families. It works. BUT, What a whirlwind! It’s now December 28th and I’m awaiting Rob’s arrival home, trying to concoct as many future meals as possible with the monster turkey I served on Christmas Day.
This morning, I got up, worked out, tidied up the house, and made this casserole. It went together effortlessly. Right now, this leftover turkey casserole is sitting in the freezer for a future dinner. Yes! It’s a perfect make-ahead meal. I’m relieved that I was able to use up some of the turkey from Christmas Day. In fact, I also made turkey chili and there is enough turkey left to make a couple traditional turkey dinners for Rob and I. Did you see the video I posted on Facebook of my mom trying to prep the turkey? It was monster turkey mayhem in my house.
