Hershey’s Acorn Cookies

This recipe for Hershey’s Acorn Cookies is a long time favorite every autumn in our house. Every year, I make these for Rob to take to work to share with his colleagues.

Here’s how I make my Hershey’s Acorn Cookies:

Hershey's Acorn Cookies

Ingredients

  • Hersheys Kisses
  • Mini Nilla Wafers
  • Butterscotch Chips
  • Cookie Decorating Icing, chocolate

Instructions

  1. Unwrap Hershey's Kisses.
  2. Lay Nilla Wafers on parchment paper.
  3. Apply a small dot of icing to wafers and secure a Hershey's Kiss to each.
  4. Apply a small dot of icing to Butterscotch Chip and secure to other side of Wafer. That's it!

Diabetic Woes

It’s SO FREAKING HARD to enjoy the holidays as a Type 1 Diabetic, married to a Type 1 Diabetic. Holidays are slathered with sugar. However, treats like this are actually easier. You might think I’m cray cray and totally NOT healthy when I tell you that when the carbohydrates are KNOWN (as in these dang processed Hersheys Acorn Cookies) it’s easier for us to take our insulin and maintain our blood sugars. When we know the carbohydrates, we know how much insulin to take. A platter of cookies at a random holiday event usually ends up with random blood sugars.

There are a few things we’ve learned. It’s easier to stick to meat and veggies. If we partake in holiday desserts… we understand we will be up half the night making sure our blood sugars behave. It’s life. It’s #T1D. It might also be why Halloween was my least favorite holiday.
