Chicken Divan

This recipe for Chicken Divan is sincerely one of my favorite go-to recipes. There’s something special about the crunch from the water chestnuts and the full-bodied earthy flavors of the broccoli and soups. By the way, it’s so easy to make this recipe too.

Chicken Divan

Ingredients

  • 2.5 cups broccoli, cooked, chopped
  • 2 cups chicken, cooked, shredded
  • 9 oz mushrooms, canned, sliced, drained
  • 8 oz water chestnuts, canned, drained
  • 21 oz cream of chicken soup
  • 1 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp curry powder
  • 1/2 cup cheddar cheese, shredded

Instructions

  1. Preheat oven to 350F.
  2. Arrange cooked broccoli in a 3 quart casserole dish. Top with shredded chicken. Add mushrooms and water chestnuts. 
  3. In a medium bowl, combine soup, mayonnaise, lemon juice and curry. Pour over chicken. Sprinkle with cheese.
  4. Bake 30-45 minutes until casserole is bubbly and cheese is golden.
