Dijon Maple Salmon

I look back at this Dijon Maple Salmon recipe and smile. It was the very first fish recipe I ever made. I served it one night at my meager apartment when my future husband (then, boyfriend) came for a visit. I think I had to ask him about 5 times if the salmon was done — completely paranoid I’d serve it too raw. I’m the type of girl who prefers charred beef as to beef with a hint of pink… ya ya, I know. Until I met Rob, I’d never grilled fish, baked fish, poached fish or really ate much fish at all.

Learning to cook fish has been an interesting journey. I remember how Rob raved about this meal. Thinking back, and knowing him so much better now, I wonder if he really meant it or if he was just trying to ease my worries. However, I ate it and I think it was pretty darn good. I was actually pretty proud… and he married me so I guess it didn’t kill him.

Dijon Maple Salmon

Dijon Maple Salmon

Ingredients

  • 1/4 cup maple syrup
  • 2 tbsp mustard, Dijon
  • 1 tsp garlic, minced
  • 1/4 tsp ginger, ground
  • 1/8 tsp red pepper flakes
  • 4 salmon fillets
  • 1 tbsp olive oil

Instructions

  1. Combine first 5 ingredients, refrigerate 30 minutes.
  2. Heat grill to medium-high heat. Brush fillets with oil.
  3. Grill each salmon fillet for 4 minutes on each side. Brush with syrup mixture while grilling. Serve when salmon flakes easily with fork.

How to Serve Dijon Maple Salmon

This recipe goes deliciously on a bed of long grain rice with a cucumber salad. It can also be served atop a green salad or alongside some fries and coleslaw. The possibilities are endless… just enjoy it with whatever you have in your kitchen. It’s sure to be the star of your meal. I’ve also enjoyed this Dijon Maple Salmon recipe with a broccoli and cheese casserole – so good!
